Air gap in kilner jars.

just become a new member today, great looking site. :).
have just made my first plum chutney yesterday.
One jar is full, the other is short by about half an inch, i covered this with grease proof
paper, and then put another on top of the kilner jar, the jar was heated in the oven before
putting the hot chutney in, what i need to know, is this second jar ok to store for the 3 months needed before using the chutney, or do i re-heat the chutney and re-seal in smaller jars.?

Welcome to the site  :D

My hunch is that it will be OK as you've sterilised the jar and taken steps to prevent bacteria settling on the top of the chutney.  The vinegar in the recipe also makes it inhospitable for bacteria to develop.

However if anyone knows better then take their advice not mine!
I try to take one day at a time, but sometimes several days all attack me at once...
