I make this every year and you can use green or red chillies.  It makes a pickle with a real bite but the sugar calms things down a bit

Preserved Whole Chillies

125g whole chillies
125g white sugar
375ml white wine vinegar
Black peppercorns, bay leaves, whatever you fancy- to decorate the jars

Leave a small stem on the chillies if you can and they stay crisper
Pack into a jar & add peppercorns etc..
Heat sugar & vinegar together and as soon as boils, pour over chillies so they are covered and seal the jar
Keep in a cool place - they are ready after a couple of weeks- and store in the fridge once open

Highly addictive  8)

Am liking the sound of this, newshoot. I have lots of as yet unstrung chillies so will give this ago at the weekend  :D

OH is looking forward to them too. Told him we have to wait a month before eating them, so two weeks will seem not so bad  :lol: :lol: :lol:

Done a couple of jars today -- they look like glowing jewels  :D :D
