:D Good for any time of year, goes with lots of different veg or salad

Slow roast belly of pork :tongue2:
Serves 6
2kg belly of pork, ask the buthcher to score the skin, leave bones in.
DON'T BUY THE MEAT FROM A SUPERMARKET, ITS NOT THE SAME :cry:
Prepare a marinade :)
Fennel seed
Cumin
Star Anise
Garlic
Pepper
Dried chilli
Put in a pestle & morter, grind up
Rub on the meat - NOT THE SKIN
Leave for a couple of hours, or the night before, better.
Pre-heat oven to 230c
Bring the meat to room temp
Use a roasting tray into which the meat fits snugly
Add a quarter pint of soy sauce and a quarter pint of white wine or sherry
Sprinkle salt onto skin
Put in oven
After 30 mins turn oven down to 115c
Cover with foil
Slow cook for 3 hours or longer.
Crisp skin at end if need be
