Butter Tarts        fills about 10 average tarts

Favourite pie dough, and rolled a bit thinner than usual unless you love doughy tarts. Use a muffin tin and cut out larger circles to fit into pan and trim off excess after fitting.

Batter:
1 cup brown sugar
1 cup raisins (more or less to taste)
1 large or 2 med eggs, beaten
1/4 cup butter or margarine, melted
1 tbsp water
1 tsp vanilla

Beat egg, add sugar, beat again. Add water, vanilla, raisins and melted butter and mix well. Drop mixture into tart shells to just over half-full.
Bake in 375F oven about 20 min. or until top is golden brown.
(Sorry, don't know gas marks)

Ingredients can be adjusted slightly to accomodate 12 tart shells (ie add another egg or a bit more sugar)

In the southern US, pecans are used instead of raisins, and tarts are called pecan tassies.

We add a bit more shortening to the dough mix so the tart shells are more flaky - lovely!

well we are hoping to have a turkey but ive not seen hide nor hair of one yet not even a frozed one , people here dont seem to have many birds this year i think its the bird flu putting them off , plenty alternatives .
