Hi - just a quick question I've strained my redcurrants since last night - I had planned to make today but I may now not have the time (or inclination!) to do so - how long can I keep the juice and does it need to be refrigerated bearing in mind its going to be boiled to death pretty much.

I frequently put the strained juice into jugs (to measure how much extracted and know how much sugar is needed). These are then stuck into the fridge until I'm ready - usually the next day but occasionally the day after. Never had any problems.

Me too same as Val, but emphasis on refrigeration!
