Thank You Val!
« on: March 30, 2011, 12:48 »
I finally got around to making my butter today!  I've done it years ago by mistake by over beating the cream, but this was my first proper attempt!  We went into the Cash and Carry yesterday, and they had a 4 pint carton of fresh double cream for £1.50, so I thought right, let's have a go!

Blimey, when you said once it starts to go it goes quickly, is an understatement!  Put it in my Kenwood with the K beater.  Seemed to take ages, so I helped it a little bit with my hand blender.  Put the kenwood back on, turned round to the sink and Brian yelled, its gone!  And there it was, 2.25lbs of lovely yellow butter swimming around in the buttermilk!

As you said, I washed it in 6 lots of very cold water, and I slightly salted 2 bits which will go in the fridge and the other 3 bits in the freezer.

Now, apart from drinking it, or putting it in soup, what can I do with the buttermilk?  :D :D

Most of the muffin recipes that I have cooked ask for buttermilk.  Sounds like a good excuse to make some.

Hiya Paddy, not 'spoken' to you for a while!  Don't know about soda bread, I'll go have a look and thanks Debz, yes, maybe some muffins called for!!! :D :D

Yep Paddy!  Looks like it may be muffins and soda bread (which I've also never got round to making before!)  :D

Hi Chrissie!  You are the only person who commented on the butter, everyone else was more interested in the buttermilk!!

2.25lbs of lovely yellow butter from 4 pints of double cream!  not bad for £1.50 eh?  half of it I salted just slightly, and the other half au naturel!  It still goes very hard in the fridge, and I've used most of it in the cakes and scones, as well as ON the scones!

Scones were slightly overcooked as I tried them in my Halogen oven for the first time!

Oh and I drank the buttermilk!!

Apparently it's what most the bakers use to make soda bread as Patrick said.
