I'm roasting a tray of veg, parsnips, sweet potato, red onion, potato, carrots, garlic head, chopped chorizo, olive oil and thyme. Going to make it into soup tomorrow but havn't tried it before with roasted veg like this.  Hopefully a good way to use up all the veg that's in need of attention.

Some of my best recipes are happy accidents. :)

That sounds like a good one. I love to roast courgettes,onions tomatoes chilli and garlic, add to a couple of tins of tomatoes and blitz  - I shall have to try yours though Ice

I'm doing a main course chicken soup/chowder tomorrow. So far it's got chicken, onion, carrot, leek, garlic, celery, potato, mushrooms, chicken stock cube, splosh of white wine, fresh thyme, two bay leaves, tarragon. Low fat creme fraiche to serve

When I have it I would add bulb fennel  :)

made some chineese chicken soup with the carcas of my chicken it was a bits and bobs soup but was tasty .

I always use any leftover mashed potato to thicken up soups and a great soup thats been going down a storm at work is spiced parsnip. Onions, parsnips & potato (if not adding mash) sweated down with a little garam masala or curry powder topped off with a vegetable stock simmered until tender whizzed up until smooth adding a little mashed potato until your consistency is how you want it! Pour into a bowl finish with a little cream and enjoy with a warm freshly baked roll!

I always find myself going for another helping!!

Just made a leek & potato soup with added celeriac which was going to be blended until smooth but there's always a but in our house -the stick blender gave up the ghost half way through :mad:Mind you I think it was my fault I used it yesterday to chop some old dried dates to put out for the birds & it overheated :unsure:
