Hi
I will have alot of runner beans ready soon,i know you have to blanch them but for how long?then they are plunged into ice water is this correct?

I did this last year for my french beans and runner beans and the beans were so much better than blanching.
I had previously  blanched for many years, but then just dropped straight into tubs without blanching for a few years, until I tried this last summer.
I made them into portion size bags and then put all them in another large tub together, save writing on each zip bag.
Worked very well and they kept their crunch, colour and flavour till early April, when I finished them off.

I stopped blanching runner beans a few years ago.
I pick them young, cut the at once, lay on a metal tray and open freeze then.
Once frozen i bag them up.
I do it daily and they last ages in the freezer. I still have some from last year.
