Title: Roasted pumpkin and sweet potato soup

Roasted pumpkin and sweet potato soup :lol:  :lol:

1 medium pumpkin  ? (My first of the season)
3 sweet potates
2 peppers
1 onion
1 garlic bulb (skin left on for roasting)
fresh corriander &parsley 1tbsp each chopped
1 tsp ground cumin
2 tsp ground corriander
1/2 tsp paprika
500ml stock
1inch piece of root ginger chopped finely.


peel, deseed, and chop pumpkin and sweet potatoes. chop peppers (deseed) and onion roughly. Seperate cloves in garlic and place with all veg in a roasting tin coat with olive oil. Roast on medium heat for 20-30 mins or till all potatoes and pumpkin are soft.  Squeeze the now soft garlic out of its papery skin and transfer with roasted veg to large saucepan and add stock and ginger, spices and herbs.
simmer for approx 10-15 mins and whizz into a creamy smooth consistency with a food processor etc

Haven't had a pumpkin yet but replaced it with a Marrow, very nice. Going to add some bacon in the next one. :D
