Mince Pies
« on: December 04, 2016, 10:50 »
Both my OH and my FIL love a mince pie.  I usually just use a shop bought mince but my OH is complaining that they are very sweet and sugary this year.  Also my FIL has been diagnosed with diabetes so I was wondering if any of you nice people would have a recipe for mince that wouldn't be too heavy on the sugar front.

I don't know if it will be to your family's taste - but I 'dilute' my shop bought mincemeat by stirring an equal amount of finely chopped Bramley apple through it, just before I fill the pies.
Makes them a bit more fruity rather than sweet and sickly, but we love them :)

Have tried this recipe before for mincemeat, from an old 1970s cookbook.
It uses less sugar so might be ok.

225 g of raisins, currants and sultanas
60g cranberries
1 large apple cored, peeled and grated
60 g mixed dried fruit
Juice and zest of one orange or Juice and Zest of a couple of clementines or satsumas.
Sugar alternatives - use 50g palm sugar or 1 tbsp treacle or honey
4 tbsp butter or 50g suet if you prefer
½ tsp ground ginger
½ tsp ground nutmeg
½ tsp cinnamon
1 tbsp port or brandy

Put all of the ingredients except the brandy into a saucepan, medium heat and stir for a few minutes.
Make sure the butter is melted if using.
Turn the heat to low, cover and cook for 15 minutes, stirring often.
Remove from heat and mix in the brandy.
Pour into jar and allow to coll before tightning the jar lids.

Instead of the normal packet dried mixed friut, add dried apricots, peaches, prunes dates and figs, chopped.
Enough for a 500ml jar.

Thanks Mumofstig,  I did this today and also put a tablespoon of Brandy in and they were much better.

Thanks,  will try this during the week.  This would probably be better for my FIL.  He is a bit down in the dumps about the diabetes particularly as he is a devil for all the traditional 'C' favourites like trifle, pudding and cake so I am trying to make sure he doesn't feel that the diabetes is depriving him.
