I make my own mincemeat as I don't like peel and use veggie "suet", use a Delia recipe as a base, but a little less sugar, and cook it on a low heat in the oven for 3 hours. Comes out swimming in fat and turns sludgy as it cools, but keeps well and is just how I like it. Made a mistake this year and forgot to add the apple.... ::)... but will add it as I use it.

Not a fan of sweet pastry, too much sugar, so use a high fat (8oz flour, 3oz butter,2oz trex, salt)shortcrust but sugar the top before baking.

I have just hit the 50 dozen mark and that is it.

No more will be made in my kitchen until next year and the answer phone is being left on.

Although the ones Paul Hollywood demonstrated on TV this week looked interesting.
Hmm might just have a go with those if I get time after the gingerbread cottage. :D

I used the grated apple as has been suggested here and it's lovely  ;)

I have made the much talked about fat free cranberry mincemeat but have not baked any pies with it yet as it says to leave it two months    Pity I didn't read the recipe 2 months ago  >:(

Doh

600 mince pies!!! WOW!!!

Were Paul Holywood's ones on the Great British Bake off Christmas special that was on BBC2 earlier in the week? I've not watched that yet but it is recorded for when I have some spare time...

50 dozen  Crumbs :D

I've made dozen No. 7this morning. But as they are eaten as fast as they are made i cant hang up my apron yet as i have none in reserve.

I saw Paul make his mince pies the other evening, thought they looked good but i would peel the apple and take the pith off the satsumas

I have the mince pies for us in the freezer frozen raw so the hungry hounds that surround me can't eat them until Christmas is here Spana.

I get to hang my apron up on Christmas Eve.

Yes the program was the Great Christmas bake of Hannah and I think I will segment the satsumas too. Might leave the peel on the apples tho'.
