Freezing soup...

Do any of you know/think you can freeze soups that have creme fraiche in? :unsure:

I have a really nice recipe for mushroom soup that I'd like to make.

I'd freeze pre-creme fraiche and add when thawed. The fat in creme fraiche/cream doesn't always reconstitute well if it's frozen within the soup.

I would do the same as surbie and add crime fraiche when reheating. Crime fraiche definitely doesn't freeze well!

Trouble is - we often take the soups to work and nuke in the microwave.
That would mean not being able to do that - AND having to have crème fraiche in the fridge for when we fancy
it  :(
Nevermind. Just have to make enough to eat then and there instead.

TBH, I'd give it a go with a small batch.  Nothing ventured ... but don't use your best and last crops in case it's a disaster!
I try to take one day at a time, but sometimes several days all attack me at once...

I haven't grown mushrooms for years so I shall be buying in ;)

I made a lovely mushroom soup a couple of years ago without creme fraiche, it froze well, I looked recipes up on bbc good food site & I think mushroom site,it had sherry in, don't know that I wrote it down though. I was given some huge field mushrooms,I'm talking huge & lbs & lbs here so needed to lose lots :lol:
