Hello,

I have an egg issue!  The neighbours all receive free eggs, the work colleagues too - but my girls regularly produce 6 a day.  Has anyone any fabulous recipes they can recommend that use lots and lots of eggs!

Yes, there is a cake called Chocolate Nemesis  :D

Lemon curd
Lemin meringue
Proper custard
Omelettes
Home made cakes and buns
Fried, boiled, poached, coddled, scrambled

You should be paid for your eggs as they're too valuable to give away for free unless you're bartering of course.  You should at least get something towards their upkeep

The reason behind the freebies, the girls can be pretty noisy - and although we're not urban, it basically keeps the often grumpy neighbours sweet!

Ah I see but it is a shame that people will accept eggs free but would not think to buy them from you.  Ingrates! 

I looked for lots of egg recipes when I got my girls and I found one of the best sources was Hugh F-Whittingstall and the book I started with was his family cook book.  I should think there are egg cookery books out there too

I made a lovely egg custard using Wozzer's recipe.  Worrell-Thompson, that's the name!  :)
A proper lemon meringue using your own eggs is gorgeous.  When making cakes etc make sure the eggs are at room temperature

I regularly (every week) make a spanish type omelette.  Soften a couple of large onions, a pepper, mushrooms potatoes, courgettes broccoli or whatever you have to hand in a frying pan.

Transfer into say an 8 inch round casseroloe or bowl and pour over 6 whisked eggs, well seasoned and put into the oven, gas mark 5 for 30 to 40 minutes.  This is lovely warm or cold and I often take a large slice to work for lunch.  yummy and beats a butty any day.

I use a lot of eggs making Gluten Free Yorkshire Puds but my friends and family all tell me they are the best Yorkies they have ever tasted. They freeze well so you can make a dozen and freeze some then just reheat from frozen for 4 mins.

To make a dozen small ones -
300 mls milk
pinch of salt
6 eggs
6 heaped dessert spoons of corn flour
Whisk well and cook, easy peasy and lovely.

If I was starting to build up a collection of eggs, a good quiche is a great way of using some of them.  shop bought pastry is fine too if you are in a hurry (or no great pastry maker).

Another use is Egg Fried Rice!

Boil the rice
Heat a frying pan with a little oil,
Crack 1 egg per serving into a jug/mug and stir together,
Pour in the pan and break up into managable chunks while it is cooking,
Once cooked, drain the rice and and to the pan for a few mins.

It's really quick and simple and makes a change from ordinary boiled rice! (Add vegetable stock to the rice as it boils and peas at the end to have a nice dish for lunch!)
It can't rain all the time.

Baked eggs on top of ratatouille

i should imagine you'd also like to have some recipes where the eggs are just hidden and not the main part of the dish - I've got lots of veggie books, I'll have a look through.

Delia online does a lovely lemon tart with 7 eggs
Lemon Meringue pie,

I always now make shortcrust pastry using egg instead of water - usually 2 for tart crust.

I am thinkink aboout a pasta machine too to use up more eggs

chocolate mousse, spaghetti carbonara (I always use 4 eggs for the two of us) frittata(8)Quiche, I always use 1 or 2 extra in recipes like these as you can easily get away with it, except choc mousse perhaps!
