Tinned strawberry wine.

I am supping some as I type this, it's a lovely rose' style wine.

For one Gallon.

2x10oz (411g) tins strawberries (in syrup preferably)
2 1/4lb sugar
3 tsp citric acid
1/2 tsp tannin
2 tsp Pectolase
Yeast nutrient
General purpose wine yeast
Water to 1 gallon.

Pour the syrup from the tin into your fermenting vessel, mash the fruit and put into your fermenter. Boil 4 pints of water and dissolve the sugar in it then pour over your mashed fruit in the fermenter. Add water to one gallon, allow to cool to 70F, add citric acid, tannin, pectolase yeast nutrient and yeast, then fit air lock.
Stir daily, when the S.G reaches 1010 strain into a clean demi john, ferment out and rack into a clean demi john, allow to clear then bottle. Taste after 3 months, at it's best after a year.

I made this on a ship in 1977! I started it as we sailed, racked it into bottles half way through the trip and drank it on "Channel Night " just before we got home. That was in the days when you did trips of nearly a year at a time though!  :?
