Cider making question
« on: April 02, 2009, 20:36 »
Hi, never made cider, so can anyone tell me how many pound of apples to a gallon of juice, and do you wash the apples in campden to kill off the natural yeasts before crushing. Thank you.

from memory I was getting a 5 gallon container from 80 - 90 pounds of apples (2 big plastic stacking storage boxes)

no you dont need to wash the apples unless they are realy muddy, you can steralise the juice with campden if you are going to use bought yeast but you dont need to

I have done it both ways, steralise and cider/champagne yeast
or just press it ald leave it to ferment its self

both work and give a different flavor, however every batch is different so its difficult to tell what difference the yeast makes
