the most yummiest scrummiest mince pie muffins!

Hi everyone, im a bit of a stranger in here, but i would like to post a recipe for these muffins.Unfortunatly i cant take credit for it, ive got it from the december issue of Delicious magazine....i baked them today, and since been out to get more butter so i can do some more they are sooooo scrummy :D

225g unsalted butter
225g caster sugar
4 lovely eggs from your girlies
250g of good quality sweet mince meat (i made my own :D)
210g self raising flour
25g cornflour
1tsp baking powder

pre heat the oven to gas mark 4/180/fan160.Line a 12 hole muffin tin with paper cases. Using an electric hand wisk, cream the butter and sugar, then beat in the eggs 1 by 1. Fold in the mincemeat until well incorporated. Sift the flour, cornflour and the baking powder into the bowl , then fold into the mixture using a large metal spoon. Spoon into the muffin tin, and bake for 20-23 mins. The cakes will still look moist, even when cooked. Leave them in the tin to cool for 10 mins then transfer to a wire rack to continue cooling. Ice when cool and decorate with holly leaves/Christmas decorations

Butter icing
in a large bowl, beat together 115g unsalted butter and 60ml of semi skimmed milk and i tsp of good quality vanila extract untill light and fluffy. gradually beat in 500g icing sugar untill smooth, add 2tbsp of brandy, mix well and spread upon your muffins
 
scoff the lot before the kids come in.....the brandy would be bad for them anyway :D
If by any chance there were ny left to freeze, you could freeze them for up to 3months UNICED!!! defrost properly, then ice them....or scoff the lot and make more in 3months time...makes more sense :D :D :D

they have been great for me because i went mad in the summer and made loads of mincemeat :D :D at least this way i can get rid of some of it :D

I also have a recipe from Delia that she calls last minute Christmas cake that uses mincemeat. I use it as a tray bake and it always goes down well.

They sound great, think I might have a try of those later.  Have some home made mincemeat that I was going to make some pies with for the office, think I might do the muffins instead.  Thanks dizzielizzie   :)

ooo a Lincolnshire Chief called Racheal made these at the good foor show near lincoln a few weeks ago.

Made these this evening, as I can't eat whaet I made them with wholemeal spelt flour, in the large size they didn't rise very well but doing half size ones worked really well. I can only eat small amouts of spelt so I'm going to have to freeze most of them or I'll make myself ill :D
