That recipe sounds very similar to the one I've made from the Carnation website.

It also freezes well in the raw state!  Freshly cooked cookies on demand!

I've made a lot of muffins of all flavours and mixtures. Some are invariably better than others. A common thing they use is sunflower all, and it's fine

Are you using fresh flour and fresh baking powder?  Baking powder has a shortish shelf life apparently

The last lot I made were stem ginger muffins from Lorraine Pascale. Lovely they were too  :)
