Title: Christmas leftovers - are you winning the fight?

I got a bit carried away in Aldi before Christmas and ended up with way too much, but we don't waste food in this house, so we're eating it until its gone  :lol:

A fridge audit yesterday revealed some fruit on its way over, so fruit based salsa with tea last night and fruit salad for today.  Also some rocket and greens, but these got incorporated into couscous yesterday as well.

A small pack of smoked salmon and a pint of milk need using today, but I'm already got pastry out of the freezer and an planning a quiche for tea.  Some cheese can get used up this way as well, some can go in the freezer and we can have cheese rolls for lunch for a few days  ;)

I stocked the turkey bones on the day, & made soup yesterday & restocked the bones again. Will freeze that to go with the parcels of Turkey meat I froze last night & some of the ham. I've got triple cheese as someone gave DD some at work from some they'd been given, then Christmas day we were given 2 lots ???. I shall give mother some to take home with her today as well as some soup,Turkey,ham,bread sauce, cream. Should keep her going for a while. I've also frozen the bread & cranberry sauce in individual portions. Still got a bit of the pud left oh & some cheesecake, mother can have some of that too.

Most of our Christmas treats were in the freezer ready to be brought out as and when wanted.

Didn't go over board this year anyway. TBH we haven't been hugely hungry after the cold virus and prefer small and quality.

We have a lot of really lovely cheese, but cheese lasts. Had a lovely gift of specialist Spanish cheese all with good use by dates.

Stocked turkey bones and froze the stock from mum's turkey. Stocked the rib of beef bones and froze the left over beef gravy.

Frozen the fresh pineapples that no one wanted to eat and am researching mango chutney recipes for the huge box of fresh mangoes that I picked up for £2.50.

I have a sack of beetroot which was really, sweet and good to make into chutney in the next few days. It is fine in the spare fridge for now.
Have a pint of cream that will need using in the next few days but I have several icecream recipes I want to try out so that takes care of that.
AM going to cook our turkey today for Sunday lunch today and slice up rest of it and take over to Son for sarnies. We agreed to get a small turkey and share it this year.

Made a visit to my butcher yesterday as he has brilliant after Christmas bargains to sell off the Christmas meat that wasn't sold. Picked up 21 day dry aged sirloin steaks, a huge free range chicken, and a large smoked gammon for silly money. :D So that is in the freezer for my birthday bash in Feb. One year I got a free range goose for £20.

A couple of slices of nut roast, some pud and a half size cheesecake. I have some smoked salmon that was on offer but with a good date so will freeze it in small batches to use to boost the flavour of fish pie or salmon kedgeree (one salmon fillet and a slice of smoked does 2, can't get smoked haddock)

That's all. The rest is every day stuff, Manchego to go with Christmas cake, a little bit of cheddar and some gorgonzola.

Wish our butcher did that Mrs Bee! Those of you who stock your Turkey bones - do you do it on the day? We get a gorgeous free range bird we should be making full use of but I can't face it on the day. Could I put the whole carcass in the freezer to deal with a week or so later?

My lovely butcher couldn't find the bird I'd ordered so gave me one a kilo heavier for the same price. The my brother and his family came down with chicken pox (small child's mum and partner haven't had it) so they didn't come for the delayed Christmas yesterday. I have about 3.5kg of turkey and many trimmings left over, a bursting fridge and no appetite for more rich food!

I save chicken carcasses in the freezer until I have enough to fill my big pan, and make a nice strong stock.

So just leave the turkey until you have the time, no rush  ;)

We only have chocolate left, as a chocoholic I have to say I am BORED with it, doesnt stop me eating it though. Its a dirty job but someone has to do it

We only have some pate and cheese left, and they will be going in the freezer as my waistline is beginning to complain --oh, and a large box of chocolates b they will be rationed not binged upon, as there will not be freezer space for them  :lol:

When we were left with more turkeys than we needed one year because some idiot asked us to get him 80 days olds and he never came for them, Once they were grown and culled, Brian jointed them, and took the breasts off, so I had quite a few carcasses.  I froze them all individually, and stocked them one at a time over a LONG period!  (I don't like waste either! LOL)

But at the moment I have more stock in the freezer than I know what to do with, so the last couple were thrown away.  My problem is, I forget the stock is in there until just as I need it, so I use a stock cube for quickness!   :(

As to leftovers, I don't usually buy too much for just us two, but leftover lamb is in freezer, Bit of Pannetone waiting to be frozen, and the other bit, plus 4 mince pies, I gave to Harry and Hazel in the village when we saw them yesterday. 

And I only had 2 measures out of my bottle of vodka, but that won't go off!   :lol: :lol: :lol:

I've got a tub of pate left but it's got til February on it. Turkey carcass was stocked on the day,& now in the freezer as well as about 5 double portions of Turkey. Cream went down the plug hole on Saturday, it was only one day out of date but was off. Some mince pies left but I made them on Thursday.

Yes, you can freeze the carcases to make stock when you are ready.  I keep all my roast meat and poultry bones on the freezer until I have enough o make stock.  I keep a small drawer in one of the freezers to store all my stock in.

Do you then freeze the stock if the bones have been frozen?
I tend to stock the carcass at the end of the meal in the pan I mashed the spuds in, soaks the gunk off :D. Christmas Day at sons I broke it all up & put it the pressure cooker that I had taken the gravy in.

Yes, no problems. You are heating the stock when you use it and the heat will kill any bugs.

I have been doing it for years and still here to tell the tale. :D

The Chinese keep stock pots simmering for years. They just keep adding scraps of meat and bones to the pot. They call them master stocks.

Brekkie today was 2 very dry croissants turned into eggy bread with 3 of the many eggs we seem to have accumulated.  Oh and a big dollop of my strawberry jam on top.

All this talk of mince pies has reminded me that I froze extra pastry to make more and forgot all about it.  More pies for next weekend maybe.

My husband said that and the tried the Heston ones from Waitrose... Very different to 'normal' one but yum and niw he is addicted

I hated mince pies until I started making my own mincemeat in my twenties. So it is the commercial mincemeat and mince pies I don't like.

Several of my son's friends say the same. Guess where they congregate at Christmas! :lol:

Apart from some meat and cheese in the freezer (which I'm not counting), I am finally there  :D

Tonight's tea is a mixed platter of ham, salami, cheese and olives, with some salad and crusty bread added.  There are still choccies around, but I'm trying to ignore them as well  :lol:

Some mince pies in the freezer, a few clematines we will finish in the next couple of days, and the last bottle of mulled wine is going down well on these cold nights :nowink:

Nope not here- the orange sherbert aftertaste just didn't go away....
Got some extra thick cream over a week out of date and still ok (probably coz it's almost butter anyway), had that on scones yesterday.
Still trying to use up the Amaretto  8)

No problem here using up Amaretto. it goes in the coffee with a dollop of cream.

Or soak sultanas in it and turn it into a cheesecake with amoretti biscuits as a base. ;) ;)

Or use the soaked sultanas in some amaretto chocolate truffles.

There you go left over Amaretto sorted and used up. :lol: :lol: :lol:

The cake s gone this week the pies are just a memory i have some pate tomorrow i make a chocolate birthday cake as one of the layers im using a box of chocolates one of many left from Christmas thats how i get my leftovers ha ha. .

Just used the blue stilton up in a celery soup recipe I found in a new slow cooker cook book, but I used the pressure cooker  :lol:. DD liked it but I didnt,but then again I don't like blue cheese  :D. I liquidised it in 2 batches. & only put cheese in 1 half, so I shall just have it without.

my favourite Christmas dinner left over would be - a sandwich of - a mashed sprout (luv em) and a bit of mashed carrot and potato/parsnip, and maybe with a bit of meat (if you're carnist), a spreading of gravy and bread sauce (two drops of almond essence totally enhances a bread sauce btw)

Tosca, do you follow any particular nut roast recipe?  I use an "enhanced" Cranks one  - folks love it...
