Hi all, We moved to a new home in January 2020, and managed to grow a good large crop of potatoes, for which I built a clamp. I now realise that the temperature may now be rather too low at present. In an article on potato storage on this site, it is stated that if starch in the potatoes has started to change to sugars, this can be reversed by in a few weeks by storing at the correct temperature (above 5C). Is this really the case? (It sounds too good to be true!). I don't think the temperature will have dropped below zero.
