Perhaps a stupid question but what makes a garlic green? Is it just picking it before the leaves die back or should certain varieties be grown?

I've sown laurel wight, solent wight and early purple wight.  Are these green varieties?

If you pick any garlic variety early, usually before the bulb has split into cloves, it is green or spring garlic.
