Here is one for your new potatoes. Its my take on an Austrian recipe.

I love this, my kids love this. It does take a while to prepare, say 30-45 minutes, but worth it.

The method is basically to steam spuds in a broad frying pan with flavours.

Quantities - what you like - I aint big on quantities.

Ingredients:

New potatoes, pan full peeled and cubed 1/2 inch cubes.
Garlic, crushed
Olive oil
Chopped onions
Thyme, dried or fresh, a good wadge - as Jamie the Olifant would say!
Eggs, one each!
Smoked bacon, sliced to 1/2 inch pieces

Method:
Heat frying pan
Add oil and garlic and onions
Fry until golden
Add potatoes, thyme and bacon, stir and put lid on
Check every five minutes or so and stir gently
When spuds are nearly done break eggs onto the top, spread around.
Replace lid to poach eggs in steam
When the eggs are cooked serve.

I dont worry too much about it sticking as the stuck stuff is usually well caramelised and very tasty. A poorly fitting lid is the worst risk to this recipe, but adding a little (very little water) can save you.

If you like you can add peas - I dont think it needs them. I have also seen recipes with artichoke. I havent tried that, but I imagine it would go well with the smoked bacon.
