Different. Might take some practice before you can play with the yolk like that without breaking it. :D

That is very clever, but I think it's a little over complicated for a simple task
It takes a little practice but this is what I do.
Take your egg and break it with one hand into the other hand which is over a bowl, the white runs through your fingers into the bowl and you are left with the yolk in your hand.

Is that a new variation on the old 'egg on the face' trick?

And that is awfully messy, plus if you are making meringues, unless your hands are absolutely perfectly clean, you will transfer fat into the whites.

Using the suction method, you could separate half a dozen eggs in a few seconds, and keep your hands clean and dry :)

I always use my hands too. Simple and quick, it has never caused any problem with meringues for me.  :)

Eggshell to eggshell here. Its how I was taught many moons ago even before Delia, who now describes that method on her website, was heard of. ;)

It's not messy at all, and I should hope that everyone has absolutely clean hands if they are preparing food. I always wash my hands before and after I touch food to prevent cross contamination but thats a whole new subject :)
If you don't like to get your hands dirty, which does seem to be common these days, then you could wear a glove I suppose, but it only takes a second to rinse clean.
The other advantage of using your hand is that you are far less likely to break the yolk, and if you do then you can dump it quickly so you keep the parts separate.
Mind you it might be worth having a go just to see the look on the health inspectors face as you use an old water bottle lol!

haha, going to have to give this a go!

I can imagine it's useful if you have lots to separate but I'll probably stick to the eggshell to eggshell method, except for a party-trick  :D

I was taught eggshell to eggshell too, but chefs I've know often do the eggshell to hand method.

Agree that the bottle method would be good for doing everal at a time, must try that!  ;)

I have two different egg separators.

Can't do eggshells, and hate the feeling of the egg white running through my fingers

But I can't actually remember the last time I cooked anything which needed only whites anyway ...
I try to take one day at a time, but sometimes several days all attack me at once...
