I have a large red cabbage to use - don’t want to pickle it...
Any one have any recipes that use red cabbage as there main ingredient - want to get it used up ideally?!
Lots of baby leaks too…..

Hi :)
I would make traditional braised red cabbage a la Delia Smith. It's delicious and makes a fine accompaniment to pork, chicken, lamb, turkey or sausages. It was traditionally served at Christmas apparently but we eat it a lot. It freezes well too

This is a recipe I saw used in Bulgaria.
Wash and cut the cabbage into small pieces.Put salt on it an press it a little with your hands to make it softer.Then put it in an oven dish and sprinkle with pepper and olive oil. Mix a little tomato puree with warm water and pour over the cabbage.
Cut a chicken into portions or use breasts of chicken and lay these on top of the cabbage.
Cook in preheated oven at about 180 degrees until ready.The time depending on your oven and chiken size
Very tasty especially if you brush the chicken with a little huney part way through.

German stytle red cabbage with apple. It is similar but doesn't have all the spices that Delia uses and imo this makes it a more savoury dish. :)

Somebody, I think it was Jamie Oliver once did a winter slaw using red cabbage and a vinaigrette style dressing if I remember? That looked good! :)

I ended up making a batch of braised - it was very good
Left some over and going to do the bulgarian one on Sunday !

It's nice just plain-boiled as cabbage too. Add some vinegar to the water so that it retains its colour.
