Loads of unripe plums from a collapsed tree

Hello everyone. Sometime last night the very mature, twisted and poorly pruned Victoria plum tree on the allotment we inherited earlier this year collapsed. We had found some pocket plums earlier in the year and were preparing to prune heavily, but it has beaten us to it. The sheer weight of the fruit obviously caused it.

I have many kg of unripe green plums. Do you have any suggestions for uses? Thanks in advance...

Thanks. Is there anything I should be doing to compensate for unripe plums when the recipe suggests riper ones? I'm guessing I should just use the bigger ones.

Incidentally, we really do have a tonne of them. If you are in Glasgow and would like some to bulk out your chutneys, drop me a line. They're up at Queens Park allotments.

hi, I made some plum jam with under ripe plums, it has produced a rather tart jam but would be lovely  with some really rice ice cram or rice pudding

Just use a little more sugar to compensate for the tartness, but don't really think a chutney would need alot more.
I think you would need quite a lot more if you decide to make jam though ;)
