Summer fruit
« on: June 21, 2007, 19:42 »
Righto, I've got a couple of pounds of mostly redcurrants (newish bush, so quite pleased) with a few rasps and strawbs in a bag in the freezer, which will have the meagre (new bushes again) blackcurrant and probably blueberry harvest added when they are ripe.  I've got a few sticks of rhubarb too.

Bearing in mind there's not enough of any one thing to even make a bowl of pudding, anyone got any idea of a jam or jelly I can make with it?  I'm very new to making jams, so a recipe would be very greatfully received!

Stick everything except the rhubarb in a big screwtop jar (700gm), 2oz sugar & microwave until it is bubbling (leave 1" airspace for this).   Seal while still very hot.

Use this bottled fruit in smoothies, milk shakes, puddings, with yogurt, with icecream, etc
