Last Parsnips - What to do with them?

Advice needed quick! Ive just pulled the last of the parsnips, what should i do with them? ideally we wanted them for Christmas but i couldnt leave them in.

Can someone tell me how to prepare them for freezing?

photo shows them besides some normal sized carrots, a couple of them have got a bit large :D

store them in soil/compost in a cold dark place

would that have to be dry soil/compost? bit of a rarity here at the moment!

will the big ones last ok? there about three inch across at the top!

no, damp soil is best.  Bigguns will keep fine

Try a wine shop. They have excellent wooden wine boxes. Our very upmarket one asks for a donation to the local hospice, my daughter in London gets hers from free. They do need a lid though because the shop usually smashes that. I made some out of mdf, and they will last for years.

This year I got carrots, mooli, beetroot, turnip, butternut squash and apples in wooden wine boxes.

Why did you need to get the parsmips out? I usually just leave mine in the ground through most of the winter. Just dig a few when the grounds soft.

I was pondering about that myself, if I can't go to the lottie for a while, I tend to bring a pile and just heel them in next to the house, roots and leeks and use as needed from there.

Carrots placed in a plastic bag and popped into the fridge will last 2 weeks.They will not taste as good as when first picked but they will still be better that the suppermarket ones. :lol:

what you see there is my total crop of 'snips! had to get them out due to lack of space, they were in the middle of a bare patch thats being manured.

I dont have a lotty, im using just the bottom of the garden, and its a struggle sometimes to make space. This patch hasnt been manured for years. My larger patch is bare but thats designated for roots next year.

The only thing that seems to be doing well this year is calabrese!
