Although I've never made it myself, as I've never got enough leftover, is parsnip wine. My old neighbour used to make it and it was lovely!
The best ones I've ever made was carrot, and a few years back I made rice wine, which tasted a bit like cinzano. It was very strong, but wonderful! ;) ;)

As Grannie says Parsnip has a great reputation as does Parsley ! My best ever was a pear at 7 yrs old it was like a dry sherry ;)
-
Parsnip it is then , I was also told wheat and raisin ?
-
One of the best I did was Elderberry...and they'll be ready in the next few weeks.. ;)

I've still got a bottle of last years parsnip - It gets very sherry-esk with age.
Juice based (and quick to drink) I think POG was my favourite but I really enjoyed the ginger wine after it had aged a bit.

I made parsnip once and it was good though mine came out a little dry.
Rhubarb too produces a good wine and will make again.
One I keep making is elderflower, just love it, the recipe I use makes a sweet wine but the flavour is just great, in fact I've made 5 gallons this year!
Best red so far for me is elderberry, made a batch which we are drinking now and it is lovely full bodied and smooth, does need leaving for at least a year in the bottle though.
Also enjoyed success with courgette wine (used instead of marrow) the recipe has a small amount of ginger that is barely noticeable but very good.
I made a damson wine one year and had loads too many so added them all, it came out like a rich port! fantastic, every year since I've been disappointed so I'll go back to my original overloaded recipe I think :D

I made Damson years ago....we've 2 Damson trees in the hedge on our allotment...no fruit last year on them for what ever reason. It's not looking to good this year so far...fingers crossed. :(

Damson makes a really good brandy Hic

I'm making rhubarb wine right now, it's my first attempt at wine from scratch.
My mate makes all sorts of weird wines, his blackberry wine is superb, parsnip wine a bit like sherry, not to my taste but good, also he's done green gauge and apple. All palatable, blackberry my favourite.

I'll bear that in mind :)
Did yours look exceptionally cloudy whilst fermenting, looks odd, like jelly bean colour
