I bought a small Morello cherry tree last year and I'm so chuffed as it is beautiful and has, I would estimate, 2-3 mugs worth of lovely red cherries at the moment. :D
It would be such a shame to waste them so I was wondering if they would be suitable for making cherry brandy and if anyone has a tried and tested recipe that they'd be willing to share? :tongue2:

1/2kg cherries,
2 tablespoon caster sugar,
1/2 bottle brandy,
(cinnamon stick - Greeks add cinnamon to everything! I think it's better without it.)
Stone and remove stems from cherries and layer at bottom of a large sterilised jar. Add the sugar (optional cinnamon stick) and cover wth brandy.
Shake well to dissolve sugar and put in a cool, dark place for 3 months, shaking jar daily for the first couple of weeks.
Finally pour through a fine sieve to remove the cherries (use them to top icecream mmmm :) and pour into sterilised bottle.
If the spirit isn't clear try clearing through a coffee filter ;)

Aw Mum, you're a treasure! :D Fankoo so much. I shall omit the cinnamon stick too, best used for cakes imho. Will probably have to 'downsize' a bit with the brandy but hey, waste not want not! :tongue2: ::) :lol:
