Red peppers Glut

I was i that posh green shop and was lucky enough to find they had reduced their red peppers reduced to 22p per kilo-so i bought 5 kg.
 Sliced and roasted them with olive oil, garlic, chilli, shallots, salt and pepper and packed them into hot sterile jars.
Does anyone have any idea how long they may last and if i need to keep them in the fridge. Thanks.

Ive no idea on how long they will last but well done on the bargin you found , maybe if you looked up a recipe it would have a rough time at the end .

Usually for peppers etc to store for long periods, they need to have something acidic with them in the jar, such as lemon juice, and  be water-bathed in the jars. Then they last for months,

If you keep the jars in the fridge however, they should last longer.

If you want to keep these for any length of time you would need to use vinegar as and oil together and even these would have a limited life even in the fridge.

You could freeze them and that will keep them for longer. It will change the texture of the peppers slightly but as you have already roasted them it shouldn't make much difference to the texture.

There are many recipes for preserving peppers in oil and vinegar mixture.

Did you put them in the fridge afterwards? How did you "process" them? In order to be safe and shelf stable, peppers need to be pickled in vinegar or pressure canned if in water. Storing low acid foods, like peppers and garlic, in oil, can be risky. I'd be inclined to throw them out. If you come upon that kind of glut again, you can always cook them and freeze them.
