Jerusalem Artichoke question

Jerusalem Artichoke question

Got given a single plant this year which I planted and its now about 6 ft high with a stem like a small tree trunk!
Never grown them or eaten before.
How do I know when they are ready to harvest?
Are they like spuds- just route around and have a look?
Do I leave the plant in or pull it up?

I start diggin them up from about Oct time when the foliage starts to die back, yes they are a bit like spuds have good root about and you'll still miss a few. I left about a 1/3 of mine in last year deliberately now I've got a 6 foot jungle in the middle of the plot  :lol:

I like to roast them, wash don't peel I can't be bothered, roll in a little oil pinch of salt and roast alongside the puds in the oven.  :D
