Nutrition in chutneys and pickles

Nutrition in chutneys and pickles

Does anyone know how much nutrition will be lost in this processing of the food. I hope we are not just eating it to fill us up and because it tastes good. Surely there will be some goodness left in the fruit and veg, I count it towards my 5 a day.

Instinct makes me stand on the side of thinking that long cooking destroying vitmains and high proportion of sugar, do not make most chutneys a particularly healthy option.

I remember reading an article saying that there was no vitamin c left in jam or home made rosehip syrup - so assume the same thing applies to chutneys  ;)................

I'll have a look to see if I can find it again

I can't find the report, just many sites mentioning that boiling destroys the vitamin content - just one of many here

I always look upon pickles and chutneys as something to enhance the flavour of foods rather than providing any nutrition in themselves.

Its an extra making something on the boring side a bit more exciting. Hubby would happily count it as his five a day.  ::)

So would I when I have a pile of pickled beetroot with my meal
