Wow.

I hadn't grasped how small stuff really is when dehydrated. I also hadn't understood the difference between home dried stuff and some of the tasteless stuff I had as a child.

Dehydrating happily now. I already think I should have got a bigger dehydrator :) I wondered if anyone has sourced spray on lemon and/or the oxygen remover thingies? I am currently using a pastry brush to brush lemon as I read a number of people saying dunking in lemon has some negative results.

I sometimes dunk stuff in lemon juice and water and it all seems OK.  Don't limit yourself to that though.  Fruit can be dunked in juice - apple rings dunked in fresh orange juice are really good and I've used soy sauce on veg as well :)

If its just the antioxidant effect you want, you can use vitamin C tablets dissolved in water  :)

You can easily make your own spray on lemon juice - just get a clean sprayer and use a strainer to pour in bottled lemon juice. The strainer takes out any tiny bits that might clog the spritzer nozzle.

I don't use lemon on my foods as I get it cut and into the dryer quickly. Others swear by it. Use whatever works best for you.

I do blanch broccoli and cauli for a few minutes, but not cabbage.
