Parsnips- do I dig them up now?

I have heard you have to wait for 1st frost to dig up the parsnips, my plants look very healthy now but should I wait

If you want to eat one, dig it up!

However frost improves the flavour.  The ones that got left in through last winter's snows tasted wonderful.

I'd wait as they just get so much better and then if you have too many in Jan - Mar next year, just freeze them in batches. I cut into large chunks, parboil, dry, brush with a little olive oil and freeze. They're then so each to use for loads of things and I've still got enough to see me through until Jan next year!

we've got about 50 growing now after we thinned and we won't touch them until the first frost hits them,it does improve the taste

one of the most impressive-tasting of the home-grown veg. Not terribly exciting picked and eaten before the frosts but by all means pick and try one.

Once there has been a frost or two they take on the most intensely sweet, earthy flavour that is a million miles away from any bought in the shops.

I lifted one to see how they were getting on ready for the show on 14/08.

Well impressed and i accidently chopped the root of in the process.
Top tip for camping....don't go.
