Spanish-style Spiced Mince Beef

This looks a first glance like a lot of stuff, but actually its herbs and spices.  Its very quick to make and easy to do in advance, and reheat.


340g minced beef  (you can use chicken if you prefer)- (I use 500gms minced meat because thats whats in the packet !)
1 large spanish onion ( I use 2 ordinary ones) - peeled and chopped
1 small green pepper, de-seeded and chopped
2, or more if you like, garlic cloves peeled and crushed or chopped
1 tspn chilli powder
400gm tinned chopped tomatoes
30 gms raisins.
2 tblspns cider vinegar
2 tspns tomato puree
1/2 tspn ground ginger
1/2 tspn dried thyme       and salt and pepper to taste.

Cook the meat in a dryish frying pan for 3-5 mins, breaking up the lumps, until it is no longer pink.
Stir in the onion, green pepper, garlic and chilli powder and continue to cook for about 8 more mins.
Mix in the tomatoes and their juice, the raisins, the vinegar, tom puree, ginger and thyme, and simmer gently for 30 mins, stirring occasionally.

Now you can go 2 ways, either serve it on a bed of lettuce and garnish with spring onions and radishes and then mix 1/2 tspn of more chilli with some low fat natural yogurt
and some crusty bread, (ciabatta, is not high in calories)
or
Serve with rice (a little bit of wild rice thrown in makes it look attractive).

This should serve 4 normally, 2 hungry adults, or just freeze whats left over for next time.

It will take about 15mins to prepare, with a total cooking time of about 45 mins.

Ginger and thyme sounds like an interesting taste combo, I'll have to have a go and see if OH is impressed.
