Freezing Sourdough Starter

You might just be able to pop it in the fridge but when I stored my last lot, I fed it a fair bit to get it active, smeared a huge blob over the food dehydrator sheets and dried it out on very low till it was crispy. It took a few days and feeds to restore it to its usual vigour.

When I dabbled in sour dough, I used to throw the starter in the freezer for about 4 weeks or so, with no issues when I went on holiday or knew I wasn't going to be able to use it.  I never went longer than four weeks as the instructor on the bread course I went on, (who gave me the starter), said it would start to degrade after that. I'm sure it probably would be alright for a while though as it always came back to life quite happily after defrosting.
