Hi

I organise teaching session (called Forest schools) with groups of children who regularly come to our woods. I would like to make elder flower cordial with them next week - but I don't have the recipe - only an elderflower wine or champagne ones, and I don't think giving them that will be a good idea - they are normally high enough already!! :lol:

So does anyone have a simple recipe - especially one that can be done in the woodland classroom?

Hi Joanna, is this one anygood?

10 large elderflower heads
2lb Sugar
2 lemons washed and sliced
1 oz tartaric acid
4 pints boiling water

Place all ingredients in a bowl.  cover and leave for 24 hours, stirring occasionally

Strain the cordial through muslin, pour into bottles, seal and sterilise.  To serve, dilute to taste with sparkling mineral water.

We're drinking this one (from WI best kept secrets book):

6-8 elderflowers
1 pint water
1 lb caster suger
2 teaspoons citric acid
juice and grated zest of 1 lemon.

Bring sugar and water gently to the boil and stir in sugar until dissolved.

Put the elderflowers in a bowl and pour the hot sugar solution over them. Stir in citric acid, lemon juice and zest. Cover and leave for 24 hrs to infuse.

Strain through muslin (we use jellybag) and bottle in sterilized containers.

Diluting with sparkling mineral water @ only 17p for 2 litres (rather than tap water) makes ALL the difference.
