jam pans and sugar!

hello
I want to try making jam but unsure whether the process will damage my lovely new stainless steel sparkling pans?!  Seems a bit of a silly question I know but I have an induction hob and can only use certain pans on it.  Also when a jam recipe mentions 'normal' sugar does it mean granulated or caster?
Any advice would be appreciated

'Normal' equals granulated as far as I kow (and that is what I use, or jam sugar which has added pectin to help the jam set)

I have used my stainless steel pans for small amounts of jam with no ill effects on the pan at all  :D

My maslin pan is stainless steel, and it's fine, because that's what it was made for.

I've got an induction hob too, and after I got it, I realised that most of my pans were polished aluminium! whoops!!!!   :lol:

in fact, I find that the acidity of the fruit brings the old pans up all sparkly :D

Thankfully.  .  .  .burnt jam comes off pans a treat after leaving to soak in hot water.  But the taste of burnt jam is an aquired taste !    :unsure:   Cheers,   Tony.
