Jostaberry Chutney?
« on: July 14, 2021, 16:02 »
I have a large Jostaberry bush full of fruit. I wanted to make Jostaberry Chutney but have been unable to find a recipe. Does anyone know of one.....? Can I use another recipe e.g. gooseberry chutney and just replace gooseberries with jostaberries? Any advice gratefully received.

As Jostaberry (Joosters) are a cross between gooseberry and blackcurrant I'd look for chutney recipes using either. Anyway, chutney to me is fruit plus onion/apple plus chilli plus sugar and vinegar - roughly 1kg total fruit to 300ml cider vinegar to about 250g sugar. Cut up fruit to your desired size, simmer in some of the vinegar with herbs/spices of choice until soft but not mushy, add rest of vinegar, all the sugar and gently boil until the spoon leaves a trail across the bottom of the pan. Spoon into sterilised jars, seal and leave a few weeks to mature before eating. There are millions of recipes out there for specifics. Try small amounts and experiment to find your ideal balance of vinegar and sugar.
