As I have double cream left from Christmas I thought I'd make use of some of the blackcurrants from the freezer as well and make icecream, I know it is snowing but it's never too cold for icecream! :lol:

My sister in law gave me her surplus single cream so do I make real custard, or the worlds richest rice pudding or another bread and butter pudding?

If you have eggs & sugar you could always put the blackcurrants on the bottom of a heat proof dish & make a creme brulee on top? I sometimes do something similar with mescarpone cheese as I'm too lazy to make creme brulee properly!

In total I've made 1.5 pints blackcurrant icecream, 2 pints ricepudding, and 0.5 pints real custard. I've frozen the icecream in yoghurt pots so I don't have to defrost all of it when I want a portion. Peter (OH) has done a quality control test and it passed! :)

It's on its way but it set a bit overnight, you may need to loosen the mixture with some more milk :D

I made it in the slow cooker, it's brilliant no need to stir.
