Chutneys - ratios of sugar and vinegar to fruit

Is there a standard ratio of fruit (weighed together with onions if using) to vinegar and sugar?  The reason I ask  is that a recipe I'd like to use gives the number of fruit (and also the onions) rather than the weight, and I suspect mine might be larger than average in both cases!

Also, does layering peeled fruit with a little salt and leaving overnight help the pieces to stay in tact rather than turning mushy?  And do you then not add salt if specified in the recipe?

My basic recipe is..
500g apples
500g onions
1000g 'others' these could be fruit, including dried fruit, or vegetables.
350g vinegar (cider or malt)
350g sugar
1 Tablespoon salt.
Slowly bring to the boil, and then simmer 'til contents are soft and the chutney it is thick enough to pot up. This will depend on which fruit/veg you've used

We managed to make our chutney with the absolute minimum of sugar - like a couple of ounces for several jars, as it's absolutely verboten here!

I still have plenty from 2019 lurking in the cupboard and the vinegar seemed to do the preservation trick!

I have to admit though, I zapped up a few jars with some nigh-on sugar-free damson jam, and added a handful of chillis, and we have loads of the best chilli jam we've had in ages!

Many thanks for the replies.  I've made many chutneys in my time, but this is a mango chutney that simply says 'four large mangoes', 'one Bramley apple' and 'one onion' along with the other ingredients.  Another specifies 900g mangoes, but I bought four mangoes according to the first recipe, and they weigh more than three times that without the Bramley and onion!  That's why I wondered if there was a standard ratio I could apply.  I'll therefore go along with your suggested ratio, Mumofstig, which looks to be 2kg in total to 350g each of vinegar and sugar plus a tbsp salt  :)
