turnip oasis
« on: August 23, 2014, 14:33 »
I have a wonderful crop (AKA a glut). Despite having peanut butter and turnip sandwiches everyday (surprisingly good!)  as well as using them in salads and boiling them instead of mash I am not getting through them

Can you freeze them (I somehow doubt it)?

If not has anyone tried making them into a soup for freezing?

Any ideas/recipes would be welcome

I've just moved this here Grubbypaws as I have recipes for you   :)   I had a turnip glut last year  ;)

This is a middle eastern pickle that is done in a brine/vinegar mix, so it doesn't overpower the mild turnip taste.

1kg turnips, peeled and cut into cubes
100g raw beetroot, peeled and cut into cubes - this colours the pickle a fetching pink hue
2 dried red chillies (or more to taste)
50g salt
300ml white wine vinegar

You could also add dried herbs of your choice.  Oregano is good  :)

Pack the turnip and beetroot into sterilised jars
Put the salt, 600ml water and the vinegar into a pan and bring to the boil, while stirring to dissolve the salt
Leave to cool and then pour over the turnips
Seal the jars and leave in a warm place for one week so the pickle gets into the veg
Eat within 1 month

Herb buttered turnips

8-12 small turnips (or bigger ones cut into chunks)
50g butter
A sprig of rosemary
Salt and pepper
4tbsp chopped fresh green herbs - parsley, mint, chives, coriander - whatever you have

Boil or steam the turnips until just tender, then drain
Heat the butter with the rosemary in a wide frying pan
Add the turnips and turn them round in the butter for 2-3 minutes until shiny and just showing some colour
Pick the rosemary out and season the turnips well
Add the fresh green herbs and shake the pan to coat the turnips

I try to take one day at a time, but sometimes several days all attack me at once...

We regularly freeze turnip - standard blanch and freeze.

Also have grown oasis this year but most gone to waste due to beetle infestation - although they do taste good. Fortunately they (the beetles) didn't seem to like our purple top turnips.

Thank you everyone; great recipes New shoot  :)

My husband decided to adapt a Michael Caine recipe for artichoke soup by substituting my oasis turnips and it was gorgeous. I have to share it with you.

The recipe for the soup can be found at

http://uktv.co.uk/food/recipe/aid/597404

He simply used turnips instead of the artichokes. We will definitely be serving this when we next entertain  :D
