I had a quantity of blackcurrants in the freezer so instead of making more blackcurrant wine I decided to experiment.I had a recipe for sloe gin and blackberry whisky and a bottle of brandy and a bottle of rum so I put blackcurrant and brandy in one demijohn and blackcurrants and rum in another.I split the differance with the sugar as I recon the blackcurrants are sweeter than sloes and a bit more tart than blackberries.
I put an air lock on each demijohn just because I have loads of them and they make a perfect seel.
But to my surprise and slight concern both are fermenting.Admitedly very slowly but you can hear the water in the air lock go 'phlub' every now and then and there are little bubbles to be seen around the fruit.

Will it be safe to drink.Whats going on.Theoretically if its fermenting it will be stronger than the spirit I started with won't it?( :DWEHHEY )
