Qusetion about Cider
« on: September 28, 2008, 16:41 »
Hi Guys

I have just  squished and pressed 12 gallons of apple juice to make Cider
Problem is I have run out of yeast.
I have another batch at the moment fermenting away, would it work if I put a pint from the active batch in the new batch ?

I think I would be inclined to try and take some off the bottom of whatever you are fermenting at the moment. That way you should get a good amount of live yeast and then I would make it into a starter with a pint or two of your apple juice, just an overnight kind of thing before pitching it into the apple juice you want to ferment. Should then enable it to et off to a good start.

Just my twopennerth

Cheers
Andrew

If you're making your cider from apple juice that you have pressed directly from apples, then you don't need to add yeast at all. Many cider makers simply use the yeasts that are present in the apples.
