What to do with all the eggs?

Now our chickens are up to full laying capacity I am finding that I am a little stuck as to what to do with the eggs (other then obvious fried, boiled, hard boiled, poached, scrambled and for baking) and wonder if anyone can recommend a cookery book or website where eggs are the main ingredient.
I always find that work gets in the way of life.

Hi there, I have loads of eggs and sometimes cannot give them away so I make lots of meringues with the whites and lemon curd with the yolks.  The kids love it but its probably not good for their teeth!!!

Nigella's chocolate cloud cake uses 6 eggs.
Made one today and had it with raspberries and clotted cream.
Bang goes the diet! ::)

When I used to have a glut of eggs, I have frozen them before.  Not whole, because they can explode, but I break 4 or 6 into a small tub which has a lid, beat them a bit to break up the yolk.  put lid on tub and freeze.

When defrosted, they go a bit like jelly, but they are fine in cooking or making omelettes and scrambled eggs!

Please send all your eggs to New Zealand.  :(  Our hens are moulting, or in some cases (mine) haven't even started laying yet.  I'm becoming very envious of people who have too many eggs.  :dry:

Sorry to hear that Lindeggs, mine are laying at full capacity but they are all spoken for.  :(  Was debating on getting more hens but am wanting to move house to somewhere with an even bigger garden so will have to hold off for now.  Unless there was an emergency home needed for some poor hen that is!   :blush:
