Advice please - jam/jelly and Kilner jars.
« on: June 15, 2010, 01:05 »
I made Blackcurrent jelly yesterday for the first time from the recipe on this site.  It turned out very well, but I used a variety of jars, two of which were Kilner jars - the jelly has set well and the jars have sealed but there is condensation trapped on the underside of the lids.  Will that be a problem?  (I read somewhere that damp jars will cause mould.)

Thank you.

As long as you sterlised the jars properly it should be fine.

A tip that I find useful is that when you have filled the jars and secured the lid, turn the jar upside down for about 5 mins and then turn back over and the heat from the jam should finish off any bacteria that managed to get in after sterilisation.

Thank you for your help Poolfield2.  I had sterilised and dried in the oven, but I'll try inverting the jars for the next batch as well.

Condensation has never been an issue here on kilner lids. Still have a batch of damson made 6 months ago and all is still well with it....

i use kilner jars for making confit in i was told the best way to stop condensation on the underside of the lid is to boil the full and sealed jar for 10 mins this has the effect of vacum sealing them

I boil all my filled jars (with metal seal lids) for about 10 minutes. They'll keep for years if need be due to the vacuum seal.
