Lamb Tagine Recipe

We had a couple of friends over last night and made this for dinner.  It was soooooooooooooooo tasty, got a half price leg of lamb on offer from the supermarket, took it off the bone and diced into large chunks.

We cooked it in the pressure cooker for 20 mins instead of the oven, then made some herb dumplings and popped them in for the final 5 mins.  Didn't have any of the Argan oil and didn't leave it overnight but it taste great and the lamb just fell apart.  We also swapped the flaked almonds for ground.


Lamb Tagine

Ingredients
1 tsp cayenne pepper
2 tsp ground black pepper
1½ tbsp paprika
1½ tbsp ground ginger
1 tbsp turmeric
2 tbsp ground cinnamon
1 x shoulder of lamb, trimmed and cut into 5cm/2in chunks (about
1.1kg/2½lb meat in total)
2 large onions, grated
2 tbsp olive oil
2 tbsp argan oil (see note)
3 cloves garlic, crushed
570ml/1 pinttomato juice
2 x 400g tinned chopped tomatoes
115g/4oz dried apricots, cut in half
55g/2oz dates, cut in half
55g/2oz sultanas or raisins
85g/3oz flaked almonds
1 tsp saffron stamens, soaked in cold water
600ml/1 pint lamb stock
1 tbsp clear honey
2 tbsp coriander, roughly chopped
2 tbsp flat leaf parsley, roughly chopped

Method
1. Preheat the oven to 150C/300F/Gas2.
2. Place the cayenne, black pepper, paprika, ginger, turmeric and cinnamon into a small bowl and mix to combine. Place the lamb in a large bowl and toss together with half of the spice mix. Cover and leave overnight in the fridge.
3. Heat 1 tbsp olive oil and 1 tbsp of argan oil in a large casserole dish. Add the grated onion and the remaining spice mix and cook over a gentle heat for 10 minutes so that the onions are soft but not coloured. Add the crushed garlic for the final 3 minutes.
4. In a separate frying pan, heat the remaining oil and brown the cubes of lamb on all sides then add the browned meat to the casserole dish. De-glaze the frying pan with ¼ pint of tomato juice and add these juices to the pan.
5. Add the remaining tomato juice, chopped tomatoes, apricots, dates, raisins or sultanas, flaked almonds, saffron, lamb stock and honey to the casserole dish. Bring to the boil, cover with a fitted lid, place in the oven and cook for 2-2½ hours or until the meat is meltingly tender.
6. Place the lamb in a tagine or large serving dish and sprinkle over the chopped herbs. Serve.

Note: Argan oil is a Moroccan oil from the argan tree, you should be able to find it in specialist food shops.[/B]

That's very similar to the recipe I use Amanda, and it's delicious! However as with most things now I don't bother with proper amounts, just chuck as much of each thing in as I want!  :lol:

Sounds nice i might just try that.

While im here a funny story about a pressure cooker, went to my auntys for tea lots of yrs ago when prssure cookers where the in thing. Anyway was in kitchen chatting when she called my uncle in as the pressure cooker had finished cooking. He then took the pressure cooker in the garden, i watched with intrest wondering what he was doing, then he got a long stick which he kept for this purpose, and hooked the wieghts on top and flicked it off with a loud woooosh of steam. Nobody had told em to run underr cold water first. lmao.
I'm very important. I have many leather-bound books and my apartment smells of rich mahogany.

I won our pressure cooker by coming second in the 'Guess how many peanuts are in the jar' at the local Hardware Store 4 years ago.

I had a restaurant at the time and didn't ever use it so stuffed it in the garage.  I sold up and moved overseas for a while and put all my stuff into storage.  It was only a couple of months ago when I emptied 3 of our 4 containers that I 'discovered' it.  It's competely FAB and I just love it.

Visiting friends and neighbours eye it with fear/awe/horror.  I can completely understand the stick thing, lol.  :shock:

As for the recipe - the 4 of us had 2 helpings each last night (goan), the two of us had it for tea tonight, OH had a second helping and there's one more helping in the fridge for his lunch tomorrow.  That works out at 12 portions out of a £9.25 leg of lamb - plus the dogs and cat got the trimming and the big bone to chew on.

I've just seen Jamie Oliver using a pressure cooker. Haven't they come on with the steam realise and general tidyness.

I might even invest in one myself now :D
