Bolted celery - Green manure?

As much of my celery bolted can I cut it down and use as a green manure?

Yes, but then also can freeze them for flavoring stews and such in the winter.

Agree with gobs. When I get stringy or bolted celery I just whiz it through the blender and put in tubs in the freezer. A great addition to winter soups.
