i've noticed this week that a couple of my main crop potatoes have produced flowers for the second time (well over a month ago the flowers died off). is this normal and is it anything to worry about?

I do not know, how common even this is. Some plants do sport a second flush of flowers in a good summer.
I'd not worry about it, however, as I'm aware the tubers mature and harden skin up for storage as the foliage dies.
Are the rest yellowing? When did you plant them?
All your worry seems to be, they might not store too long.

I did notice that a lot of ours had started to sprout......never known this so early before :wacko: :wacko:

they was planted a couple of weeks after the frosts, so they've been in there a while now. there are a few of the leaves turning yellow, i thought they was going to die off but stayed mainly lush and green, then the second flowers arrived.
the main crop i planted last. cheap ones picked up to clear stock at the start of summer have now died off nicely. all in roughly the same soil.
so should i be cutting the foliage off or allow the flowers to carry on?
will the second flush of flowers in theory mean there are more tubers developing?

My Picasso did the double flowering trick this year but I've just left them to get on with it. Foliage is still mostly green and healthy so they are obviously still growing.
