I'm just trying out my first batch of turbo style cider with a few little extras :)
Judging by the quick sample I've just tried, it's going to come out like rocket fuel  :blink:

It's reaching the end of fermentation, but very cloudy. How long can I afford to leave it to settle whilst still having enough life left in the yeast to get some fizz from sugar in the bottles?

That depends ...
What yeast did you use ?
What was the start SG ?
Whats the SG now ?

Starting SG was 1.053 and I used a wine yeast. I've not tested it now, as I've not got a suitable container to hand and don't want to have to decant too much of it into a larger vessel to test it.
