In alone this afternoon so thought i would do some baking :D
Thought i would do some heavy cake , heres my recipe for you all;
Heavy Cake
12oz S/R flour
3oz lard
3oz butter
4oz sugar
4 to 6oz sultanas
Drop milk
1tsp cinnamon (optional)
Rub together flour/lard/butter
Add sugar and fruit, cinnamon if using (i dont) bring it all together with milk, not to runny.
Bake in a square tin.
When cooled cut into oblong shapes.
Slice in half spread butter on and enjoy :D

Why the name Heavy?

I think it would tend to be heavy in texture with those proportions of ingredients, not light like a sponge and there's no egg in it either.
The recipe is very similar to scones, as far as ingredients are concerned....so may be one of those things best eaten fresh :)
Put the kettle on for the tea to go with it and I'll be round to sample some........just to see if it does taste like scones, of course :D

My mum called it heavy its her recipe i got it off her as loved it as a kid.
Yes it is a bit sconey but i think better. The trick is getting the final mixture consistency right not to wet not to dry.
Its best eaten in day or 2 , dont forget the butter.
